Butternut squash and white bean spread

A delicious spread that can be served on bread or used as a creamy dip in other dishes. Tip: this spread fits also perfectly to our Rolled oats bread.

Here’s what’s you need:
500 grams of butternut squash
200 grams of white beans, canned
30 milliliters of olive oil
100 milliliters of water
50 milliliters of lemon juice, freshly squeezed
1 teaspoon of salt
1 pinch of pepper, freshly ground

  • 50 milliliters of lemon juice, freshly squeezed

  • 1 teaspoon of salt

  • 1 pinch of pepper, freshly ground

Directions

  • Peel the butternut squash and cut it into 2-centimeter cubes. Drain the white beans.
  • Transfer the butternut squash and white beans into the Airfryer basket and bake them at the 180°C temperature for the 20min.
    Tip: Shake Basket
    Open the Airfryer and shake the basket once during cooking.
  • Let the baked butternut squash and beans to cool down and then transfer them to the food processor. Add olive oil, water, lemon juice, and spices and blend into a smooth spread.
  • Serve the squash and bean spread with fresh or toasted bread.
