Summer salad with roasted nectarines and pumpkin seeds

Tip: Cream of Balsamic is a reduction of balsamic vinegar. You can also make it yourself by heating up balsamic vinegar in a pan on the stove until it thickens.

What’s You Need for Summer Salad

  • 2 nectarines
  • 1 teaspoon of honey
  • 50 grams of feta cheese
  • 50 grams of lamb’s lettuce
  • 50 grams of garden rocket (arugula)
  • 1 teaspoon of balsamic cream
  • 1 tablespoon of olive oil
  • 1 pinch of black pepper, freshly ground

How to make Summer Salad

Step 1: Put the pumpkin seeds into the basket of the Airfryer and roast them at the 200°C 3 minutes. When ready, remove them from the basket and leave them to rest on a paper towel.

Step 2: Meanwhile halve the nectarines, discard the pits. Drizzle honey on top and place them into the basket of the Airfryer and fry at the 200°C 5 minutes.

Step 3: Crumble the Feta. Cut the nectarines in slices, discard the skin.

Step 4: Combine rocket and lamb’s lettuce. Add crumbled Feta, put the nectarine pieces on top, sprinkle with roasted Pumpkin seeds. Drizzle some cream of Balsamic vinegar and olive oil. Season with freshly ground pepper.
