Heat oven to 350°F. Line a 9-by-9-inch baking pan with parchment, leaving an overhang on two sides. Scatter oats on a rimmed baking sheet and bake until toasty, 10 to 15 minutes.
Place honey, nut butter, and coconut oil in a pot over low heat and stir until throughly combined and warmed through, about 2 minutes.
Place the cereal and oats in a large bowl and stir to combine. Pour the warm peanut butter mixture over the cereal and stir to coat the dry ingredients thoroughly.
Place the mixture into the parchment-lined 9-by-9-inch baking pan, gently pressing down to even it. Freeze the mixture for at least 45 minutes.
Remove the bars from the pan, transfer to a cutting board and, using a serrated knife, cut into bars.
