Mexican gorditas with spicy chicken

200 grams of all purpose flour, 1 teaspoon of baking powder, 120 milliliters of warm water, 30 milliliters of vegetable oil, 0.5 teaspoons of salt, 4 teaspoons of vegetable oil..

200 grams of chicken thigh fillets, 0.5 teaspoons of salt, 1 pinch of pepper, freshly ground, 0.5 teaspoons of chili flakes, 1 red onion, 100 grams of black beans, canned, drained, 100 O grams of salsa sauce, 4 tablespoons of sour cream, 2 tablespoons of parsley, flat-leaf.

Step 1

In a medium-sized bowl, add the flour, baking powder, warm water, vegetable oil, and salt. Mix all the ingredients using a silicon spatula until they are well combined.

Divide the dough into 4 equal-sized balls and cover them with a kitchen towel. Let the dough rest for 30 minutes.

Step 2

Use a rolling pin to roll out the dough into rounds, around 10 centimeter in diameter, so that you can fit two of them in the basket.

Step 3

Brush some oil on top of the rounds and transfer two of them into the Airfryer basket. Add the Philips double layer accessory to the Airfryer basket and place the other two gorditas on top of it.

Put the Airfryer basket in the Airfryer and start the device with the 200 °C Temperature 7 minutes. Wrap the baked gorditas in a kitchen towel and set them aside while you prepare the filling.

Step 4

Cut the chicken thigh into small pieces and season it with salt, pepper, and chili flakes. Peel the onion and chop it finely. Drain and rinse the beans and mix everything together with the salsa.

Step 5

Put everything in the baking accessory and bake at the 180 °C for 18 minutes.

Step 6

While the gorditas are still warm, cut a slit in the side of each gordita big enough to stuff the gorditas with filling. Finish up with some sour creme and chopped parsley.
